Being a 'primitive' breed, they usually lamb in April though a few will be born in March or May. This means that lamb is highly seasonal and limited to the months of October to December. In Spring and Summer we have mature lamb and mutton may be available during the winter months.
A whole shearling weighs between 16 to 20 kilos and may be processed by the butcher to order - whole or half leg joints and rolled shoulder, chops and burgers and sausages.
Wool
The finest can be used for knitting baby clothing, shawls etc.
Second grade is ideal for weaving and knitting while the coarser wool may be used for rugs, felting and other craft work.
